In this “4-stage rub” Big Bob Gibson adds a new level of flavor. Try each “stage” as it’s own rub or jump straight on up to Stage 4, and as always, feel free to amend or tweak it to you own preference.
Stage 1

Stage 4 (Final)

- 2 tablespoons kosher salt
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- ¼ cup paprika
- 1 teaspoon ground cumin
- ¼ teaspoon ground coriander
- 1/8 teaspoon allspice
