Jackie mixing Corn Salad

Ingredients

  • 1 can (15 ounce) whole kernel corn, drained
  • 1/2 cup diced onion (red)
  • 1/2 cup diced bell pepper (green)
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 bag (10-1/2 ounces) crushed Chili Cheese Fritos

Instructions

The night before, mix everything up, except the Fritos. Add Fritos when ready to serve.
Approximate measurements:
  • 1/2 cup of onion = 1/2 onion
  • 1/2 cup of bell pepper = 1/2 bell pepper
Serves 12. If making recipe for more people, use both green and red bell peppers for variety.
