- 1 can (15 ounce) whole kernel corn, drained
- 1/2 cup diced onion (red)
- 1/2 cup diced bell pepper (green)
- 1 cup grated sharp cheddar cheese
- 1/2 cup mayonnaise
- 1/2 bag (10-1/2 ounces) crushed Chili Cheese Fritos
The night before, mix everything up, except the Fritos. Add Fritos when ready to serve.
- 1/2 cup of onion = 1/2 onion
- 1/2 cup of bell pepper = 1/2 bell pepper
Serves 12. If making recipe for more people, use both green and red bell peppers for variety.
