Of the many great recipes that Jackie shares with the students in ANSC 117, Texas Barbecue, Dirt Cake has to be near the top from a popularity standpoint. Several of the students went to our house to make up batches of Dirt Cake, and three of them demonstrated how to make it in class. Devon King, Natalie Hoelscher, and Menzi Spiller made a batch of Dirt Cake to show how easy it is to make, and with sampling, how wonderful it is to eat.

Jackie Savell
Ingredients:
- 8 oz. cream cheese
- ¼ c. powdered sugar
- ½ stick butter
- 2 pkg. instant vanilla pudding mix (small)
- 2 ¼ c. milk
- 12 oz. Cool Whip
- 2 packages Oreo Cookies
Directions:
Place cream cheese, powdered sugar, and butter in a bowl and cream together. In a separate bowl, combine pudding mix and milk. Gently fold the cream cheese mixture into the pudding. Gently fold in the Cool Whip into the mixture. Grind the Oreos in a food processor until you have a fine crumb. Layer the cookie crumbs with the pudding mixture beginning and ending with the cookie crumbs. If kids are present, you can hide gummy worms in the dirt as you layer it.
